Tomato Herb Salad

This colourful salad is bursting with flavours that will remind you of sunny summer picnics with every bite!

Ingredients

6 medium tomatoes
1 medium onion
1/3 cup (75 mL) finely chopped parsley
1/3 cup (75 mL) finely chopped basil
1/3 cup (75 mL) finely chopped chives
1/3 cup (75 mL) extra virgin olive oil
1/4 cup (50 mL) pine nuts (or raw sunflower seeds may be substituted)
3 Tbsp (45 mL) pesto sauce (optional)
1 tsp (5 mL) Celtic sea salt

Note: Whenever possible choose organic, local ingredients.

Directions

1. Dice tomatoes in large chunks and place into a colander to drain excess juices.

2. Finely chop the onion and fresh herbs and place in a bowl.

3. Add the olive oil and pesto sauce then mix in the diced tomatoes.

4. Mix in the salt just before serving the salad, since the salt will tend to draw out water from the tomatoes.

5. Garnish with pine nuts (or raw sunflower seeds).
