Quinoa Paella
Quinoa
is an ideal substitute for rice and a nutritional powerhouse that
contains a balanced set of essential amino acids making it a complete
source of protein.
Ingredients
1/4 cup (75mL) Extra virgin olive oil
1 Onion chopped
3 Minced garlic cloves
2 Chicken breast diced
3/4 Pound chorizo sausage chopped
1 1/2 cup (375 mL) Quinoa rinsed
2 1/2 cup (625 mL) Chicken broth (plus a little more if needed)
2 Pinches of saffron (or more to taste)
2 tsp (10 mL) Paprika
340 gm Bag of shrimp (approx. 1 1/2 cup)
270 gm Jar of baby clams (approx. 1 cup)
1 cup (250 mL) Black olives
1 cup (250 mL) Peas
2 Chopped tomatoes
2 Red or orange peppers sliced
Salt and pepper (or chili flakes) to taste
Lemon wedges for garnish
Note: Whenever possible, choose organic, local ingredients.
Directions
1.
Quinoa must be rinsed to remove the bitter outer coating called
saponin. Put the quinoa into a large bowl. Cover with water and stir
well to wash the grain. Pour off the water and then repeat the washing
process. You may also put the quinoa into a fine mesh strainer and
rinse thoroughly.
2. In a large wide deep open pan heat olive
oil at med-high heat. Add onion and garlic and cook for a few minutes
to soften up onion.
3. Add the chicken and sauté for a few minutes, and then add the chorizo sausage stirring until chicken is almost cooked.

Add rinsed quinoa, chicken broth, paprika and saffron. Mix well,
cover, turn heat to med-low and simmer for 15 min. Next, check to see
if more broth is needed. If it looks dry, add a little more broth.
5. Add shrimp, clams, peas, peppers and tomatoes, and cook until shrimp are pink. Add olives and mix.
6. Garnish with lemon and enjoy.
