Pecan Lime Chicken


A unique and zesty chicken recipe that is easy to prepare!

Ingredients

4 skinless, boneless chicken breasts
1 egg beaten
1/3 cup (75 mL) gluten free flour
1/2 lime juiced and grated peel
2 Tbsp (30 mL) of lemon juice
1/2 cup (125 mL) finely chopped pecans
Pinch cayenne pepper

Note: Whenever possible choose organic, local ingredients.

Directions

1. Marinate chicken breasts in lemon juice for a few hours.

2. Preheat oven to 375° F.

3. Whisk egg in a bowl and mix in cayenne pepper grated peel and juice from lime.

4. In three separate plates place flour, egg and pecans.  Coat chicken with flour, dip into egg mixture, then roll into finely chopped pecans.

6. Place chicken on a baking sheet and cook approximately 20 minutes or until chicken is cooked through.
