Sugar & Dairy Free Vanilla Custard
A light and refreshing dessert with simple and healthy ingredients.
Ingredients
4 cups (1L) Vanilla Rice milk (Rice Dream)
6 eggs
1/2 tsp (3mL)
Stevia
2 tsp vanilla extract
1/4 tsp Sea salt
Ground nutmeg to sprinkle
Note: Whenever possible, choose organic, local ingredients.
Note:
Stevia can be purchased as a powder, a liquid, or crushed leaves.
Varying degrees of sweetness will occur between different forms and
companies.
Directions

In a medium saucepan heat rice milk and stevia just before it starts to
boil. Let cool a few minutes, if the milk is too hot it will cook the
eggs.
2. Beat the eggs, vanilla and sea salt in a large bowl until smooth. Gradually beat in hot milk.

Pour mixture into custard cups and sprinkle generously with nutmeg. In
a large baking dish place custard cups and fill the baking dish with
water until the level is about one inch below the top of the custard
cups.
4. Bake, uncovered, in a preheated 325°F (160°C) oven until sharp knife inserted halfway comes out clean, approximately 1 hour.
5. Cool custard cups on a wire rack, then refrigerate until well chilled.
