Pistachio Paradise Pudding


Paradise is the only way to describe this amazing nutrient rich raw food pudding!

Ingredients

2 cups premium coconut milk (one 400 ml Can)
1/3 cup (75 mL) shredded unsweetened coconut
1 1/2 cup ( 375mL) pineapple juice
1 avocado
1/2 cup (125 mL) chopped prunes
1/2 cup (125 mL) raw pistachio
1/2 tsp (2 mL) real vanilla extract
1/2 tsp (2 mL) Celtic sea salt
(optional) 1/2 tsp (2 mL) of Matcha green tea powder

Note: Whenever possible choose organic, local ingredients.

Directions

1. Place all ingredients in a blender and process until a creamy and smooth texture is achieved.

2. Refrigerate approximately an hour before serving.

3. Garnish with pineapple and mint leaves.
